The fruit was picked by hand and the whole bunches were pressed under cool morning conditions. After 12 hours of settling the juice was drawn off heated and a selected strain of yeast was added to start fermentation. Once fermentation was complete the wine was aged on yeast lees for 2-3 months to give it texture and complexity.
