Vinification
The grapes are harvested at optimal ripeness, preferably in the morning, and fermented in stainless steel tanks.
A pre-fermentation cold maceration of 24 to 48 hours is carried out on selected parcels.
Fermentation temperatures are carefully controlled to preserve the wine's softness and the purity of its fruit.
Pump-overs are performed twice daily (45 minutes each) during fermentation to ensure optimal color extraction.
Fermentation maceration lasts 3 to 4 weeks.
The wine is gently pressed using a traditional vertical press with 5-hectolitre cages.
Ageing
Aged in concrete tanks for 12 months.
Tasting Notes
Appearance: Cherry red.
Nose: Delicate aromas of red berries, dominated by blackcurrant, complemented by subtle violet notes.
Palate: Smooth yet vibrant on the attack, with fine, round tannins on the mid-palate and a long, persistent finish.
Food Pairing
An excellent match for grilled meats, roasted dishes, game, and hard cheeses.
Ageing Potential
Can be cellared for approximately 10 years.
For the best tasting experience, we recommend decanting the wine or opening the bottle one to two hours before serving.
